The Best EVER Protein Mug Cake

·

I have been on a mission to find the perfect protein mug cake. In the last month, I have tried more than a few and I have been sorely disappointed each and every time! I think I’m going to get this great sweet treat to help fill the void of cake in my life, and all the ones I tried were just not good! They were actually border line inedible! Sticking with proper nutrition has and will always be my Achilles heel. So that is why it is super crucial for me to find healthy alternatives… So that I can stay on track and keep moving forward and keep crushing my goals! So when I tried this particular recipe and took a bite… I think I might have heard angels singing! It’s that good! I made a couple more small tweaks and what we have here is PURE Protein Mug Cake perfection!! My mouth is watering just thinking about this!!

The search is OVER! Stop making cardboard treats! This Mug cake is what dreams are made of!

The Best EVER Protein Mug Cake EVER!

Adapted From Fries To Fit

2 TBS Coconut Flour

1 TBS Chocolate Protein Powder  – I like Quest Protein Powder for my Baking Recipes

1/4 tsp baking powder

1 TBS Stevia

1/4 tsp pure vanilla extract

1/4 C Egg Whites

2 TBS Unsweetened Vanilla Almond Milk

Mix Ingredients until smooth then pour into prepared mug – I used coconut oil.

Bake in microwave in mug for 1-3 minutes at 70% power checking every minute. Mine took two minutes and it was PERFECT!

To make the yummy velvety chocolate drizzle

1 TBS Smooth All Natural Peanut Butter

2-3  dark chocolate chips- I like this kind kind for Chocoley

Melt PB & Chocolate until smooth and pour over your cake! – Seriously HEAVEN! + Healthy – that’s a win my friend!

Enjoy!

I have so many mug cakes pinned, but never seem to get around to making them! Pinning this one and appreciate you sharing!!

    1. I have pinned and made more than my fair share and this one was the first one that didn’t have a weird cardboard like consistency! I totally might have screwed them up! But this recipe was the winner in my book! 🙂

I have yet to make a mug cake… but I seriously need to do it. They always sound so good and would make for the perfect bedtime snack!

    1. Enjoy! Seriously such a great way to sneak so more Protein in at the end of the day!

  5. this was delicious!! i like the combo of the coconut flour and protein powder because it’s not too dry that way. i’ve had some unlucky mug cake experiences where i’m pretty sure i’m eating a piece of cardboard. i had a knife get stuck in the cake TWICE.
i added 5 tbsp of coconut milk since mine was very thick and i like the batter more liquidy. it came out super moist and flavorful

    1. great idea! I’ll have to try it 🙂

  6. I made this recipe this morning. It was the bomb; talk about breakfast of champions. I have hated mug cakes in the past, but this one was fantastic. Thank you for sharing!

  7. Hey there! This looks amazing and I definitely am going to try making! Do you know per chance how many grams are in 1 tbsp. of Quest chocolate protein?

  8. Karen Froschauer says:

do you think you could use other flavors of protein powder such as blueberry, pina colada or coffee??? Also love the peanut butter but have the pb2 powder.. has anyone used that mixed with the chocolate chips ??

    1. I have used other flavors with success! I have not tried the powdered PB. So not sure if that will mess with the consistency or not! Chocolate chips are always a fun add and do well 🙂 Thanks for stopping by!!

It tasted great! I was thrilled to find a recipe that didn’t call for a tablespoon of coconut oil. If I’m trying to be healthy why add an extra 120 calories of fat to a mug cake.
