My favorite indulgence at Thanksgiving are the Sweet Potatoes. Alone Sweet Potatoes are healthy and are an amazing source of nutrients. But then at Thanksgiving we strip away any resemblance of “healthy ” and they become pretty much pure crack… Freaking good stuff! So I took my favorite concotion that I have worked on for years and made it HEALTHY!!! My brother in law who is a total foodie snob actually prefers my sweet potatoes to the famous uppity steak house! That is a total feather in my cap! His compliments are not easily earned. I have to say my healthy made over version are equally good! I can’t wait for BIL to try them at Thanksgiving to see if they pass his very critical taste buds

Healthified Ruth Chris’ Sweet Potato Bake

3 Med Size Sweet Potatoes -prepared (Boil for 30 minutes)
1 Cup Stevia
1/4 Pure Maple Syrup
2 tsp Vanilla
1 TBS Cinnamon
1 tsp freshly grated nutmeg
1 tsp orange zest
1/4 C Soy Milk Egg Nog (Or Light Egg Nog)
1/2 C Coconut Oil
2 eggs

Preheat oven to 375 degrees
Mix all ingredients in mixer until well combined and then spread in prepared baking dish (9×13)

Topping
1/3 C Almond Flour
1 Cup Chopped Pecans
1/3 C Melted Coconut Oil
1/3 C Sugar Free Syrup

Mix Topping Ingredients together and Spread over Sweet Potatoes

Bake for 25-30 minutes – Let Sit for 20-30 minutes before serving

Look How Yummy!!! This stuff is pretty much AMAZING!!!

  1. What exactly is the syrup (called for in the topping)? Is it pancake syrup?
