Whip It Up Wednesday!!!
Every year for my Hubby’s birthday I try to come up with a new and exciting cake for him! It’s become somewhat of a tradition, as to what I’ll make him each year. This year I decided I would make a cake inspired by his favorite ice cream Cookie Dough! It was SOOOO good! And a huge hit! The light and delicious yellow cake tasted divine with the cookie dough middle layer and combined with the chocolate buttercream frosting we’re talking goodness overload!!!
Heavenly Cookie Dough Cake
Make One Yellow Cake Mix according to directions… As I have previously mentioned I ALWAYS church mine up with swappn’ out the water for milk, adding an extra egg and doubling the oil and using melted butter instead (Life changing people!!) Divide batter into two 9″ rounds and bake according to directions
Once cake is cooled, use segregated knife to cut rounds in half so you now have 4 pretty thin cake rounds!
Cookie Dough Filling — Adapted from Key Ingredient
1 8 oz Cream Cheese Softened
1/2 C Butter Softened
1 Cup Powdered Sugar
2 tsp Vanilla
1 Cup mini Chocolate Chips (milk chocolate)
1 Cup toffee chips
Cream together ingredients in mixer…
Starting at the bottom apply a generous layer between each cake round!! Leaving the top of the cake uncovered.
Chocolate Butter Cream Frosting — Adapted From Key Ingredient
1 Cup Butter Softened to Room Temperature
1/2 Cup Cocoa Powder
5 Cups Powdered Sugar
2 tsp Vanilla
5-6 TBS Heavy Whipping Cream — to desired consistency
Last step slather this yummy frosting all over your cake!!! To decorate the cake I took some of the leftover toffee bits and pressed them on to the sides of the cake and then sprinkled the toffee bits and some chocolate chips on top!!!
