This time of year it can be really hard to stay on track with your health and fitness goals. It can be so easy to just say “screw it” and wait for January 1st to get back on track. But I think by using that mentality you miss an opportunity. By staying focused especially through the Holidays you get extra opportunities to learn self control and moderation. Sam’s Club understands how hard it can be to stay on track during the busy holidays! I am digging this Sweet Potato Chili recipe I found via their app. It is packed with super food goodness.

There are so many ways to make the flavors of the season healthier! Get creative! There is also another great article in the Nov/Dec issue of Healthy Living Made Simple – It discusses some great swaps you can make to not lose any flavors – just the fat and calories! Which is a win my friend!

Sweet Potato Chili jam packed with super food goodness

 

 

Sweet Potato Chili

Adapted from Sam’s Healthy Living Made Simple

1 Tablespoon Garlic Infused Olive Oil

1 Medium Onion

1 Can Vegetable Broth

1 ½ Cup Sweet Potatoes, cubed

1 Can Meixcan Style stewed tomatoes

1 Can Pinto Beans – rinsed and drained

1 Can Black Beans- rinsed and drained

1 Cup Fresh Frozen Corn

2 TBS Italian Seasonings

1 Tsp Cumin

¼ Fresh Orange Juice

Cooking Directions

Sautee Onions For Sweet Potato Chili

Heat Olive Oil in medium stock pot over a medium-high heat. Add onion and saute until golden brown. Add chili powder and stir for 1 minute.

Add Chili Powder

Add broth and potatoes, cover pan and reduce heat to medium. Simmer until potato is almost tender (about 10 minutes)

Boil Sweet Potatoes for Chili

Add tomatoes with juices, and pinto and black beans. Add corn. Simmer uncovered until chili thickens and potato is very tender. (10 minutes)

Mix in orange juice, Italian seasoning and cumin. Add kosher salt and pepper to taste to serve.

Optional: Top with plain non fat Greek yogurt, and reduced fat cheese.

    1. I’ve made it a couple times since posting and we LOVE it at our house! I usually add some ground turkey to make it more substantial for my man. 😉
