Better Than Yo Mamma’s Cake

Whip It Up Wednesday!! 

I love me a good Paula Deen recipe!! That woman can cook! Awhile back she shared this cake that she had entitled “Is it Really Better Than Sex Cake” … which she clarified with the statement, it depends on how old ya are. 😉 Gotta love Paula Deen. The cake as is, was FAN “freaking” tastic but over the years I’ve tweaked it and now I think I’ve come up with a new and uniquely divine twist or her classic.

Better Than Yo Mamma’s Cake
Adapted from Paula Deen

1 Box Yellow Cake Mix — Make According to Directions on Box –( I always church mine up by using milk instead of water and an extra egg and then double the amount of oil asked for but use butter instead + 1 tsp vanilla — This little concoction will rock your world!!)
1 Can Crushed Pineapple
1 Cup Sugar
1 3.4oz Box Vanilla Pudding
1 Cup Milk
1 Cup Canned Coconut Milk
1/2 tsp coconut extract
1 1/2 Cup Heavy Whipping Cream
1/3 C Sugar
2 Limes
1 tsp vanilla
1 Cup Coconut – Toasted

Preheat Oven to 350 degrees – prepare cake according to directions (see my above notes for tweaking suggestions)… When cake has about 10 minutes left, Place Crushed Pineapple and 1 cup sugar in sauce pan and bring to a boil then lower and let simmer until cake is done. Once you have removed cake from oven poke holes with knife or fork all over. Then poor the pineapple over then entire cake. Let cool
Pudding Layer : 
Prepare Pudding using milk and coconut milk with coconut extract — spread over the cooled cake and place back in the refrigerator to let cool
Lime Whipped Cream: 
Place Heavy Whipping Cream and 1/3 Cup (or to taste) Sugar in Mixer add zest of one lime and juice of two to mixer beat until soft peaks form. Spread Layer over Pudding Layer then let sit to set.
Toast Coconut on Stove Top — Watch carefully it can burn quickly! Spread toasted coconut over the top of your cake! Then Enjoy!!!
The longer this cake sits the better it gets — The flavors set and marry and it becomes ONE irresistible CAKE!!!!

Work out any frustrations when you are stabbing holes all over the cake… This can be therapeutic!

Spread the yummy syrupy pineapple goodness all over that yummy cake…

All that is left to do is enjoy this yummy goodness!!! I like to grab my fork and eat it right out of the pan!!! (Just between you and me)

  2. on the pineapple…what size can and do you drain the juice..dying to try this..and should I worry about the lime juice curdling the whipping cream ????????

    1. I use one 20oz can of crushed pineapple, do not drain!! You want those yummy juices! 🙂 The lime juice will not curdle your whipping cream! Enjoy!
