Chocolate Peppermint Pudding Parfaits

For as long as I can remember, the holidays have been synonymous with the flavors of chocolate and peppermint. Well, at least in my book of life.

I remember as a kid looking forward to coming inside to a warm cup of hot cocoa topped with candy canes and whipped cream, it just felt right after hours of playing in the glorious snow.

As an adult, I still love these flavors. But I get it, the holidays can be a bit trickier when you are trying to navigate your favorite splurges and maintain your momentum while trying to lose weight. I hear this from my readers all the time. 

I firmly believe you can still enjoy the fun and tastiness of the holidays AND still maintain your momentum. It’s all about finding balance and being creative in the way you enjoy your favorite flavors!

I’m so excited to team up with my friends at Atkins to share a yummy twist on my favorite holiday flavors. Yep a tasty protein-packed way to thoroughly enjoy the perfection that is chocolate and peppermint!

 So, whip up a batch – stock your fridge and bring on all the cheesy but delightful Hallmark movies.

This chocolate peppermint protein pudding is super easy to whip up and looks beautiful served as a parfait, you can enjoy it as is.

All you need is your handy dandy blender – this recipe really is SUPER easy to throw together

In your high-powered blender, combine 1 Atkins Creamy Chocolate Shake, Heavy Whipping Cream, Erythritol, Cocoa Powder, Xanthan Gum (Natural Thickener) and Peppermint Extract. Blend for 60-90 seconds. 

While blending or before, place sugar free peppermint candies in a plastic bag. Then, proceed to shatter them to smithereens – this is actually super fun and oddly therapeutic.

 

Start layering parfait cups with pudding mixture then crushed peppermint candies, and whipped cream. (I made whipped cream, using heavy cream with a bit of Erythritol, but you could grab a sugar free option at the store) Continue layering until cups are full and beautiful. You may eat them right away – but it is best to wait for 1 hour until they set. If waiting, it is best to leave the last layer of whipped cream until right before you get ready to serve them!

Ingredients

  • 1 Serving Atkins Creamy Chocolate Shake
  • 3/4 Cup Heavy Cream. liquid
  • 1/4 Cup Erythritol
  • 1 TBSP Cocoa Powder
  • 1 1/2 Tsp Xanthan Gum
  • 1/4 Tsp Peppermint Extract

Instructions

  1. Follow above directions if making parfaits – if not, separate into 4, ½ cup servings and place plastic over the top and refrigerate for 1 hour or more until set.

You’re going to love how light and flavorful they are! And they can be fancy enough to wow any crowd. Even my picky kiddos wanted to gobble these yummy protein pudding parfaits right up. So yep, they are also kid-friendly.

You could easily add a scoop of Atkins Milk Chocolate Protein Powder to punch up the protein even more!
