Slow Cooker Chicken Pesto Soup With Orzo
Although spring is in the air and I am seriously wishing and hoping for warmer temps, it has been raining like crazy here in the great state of Utah.

Whether it is warming up for you or not, soup is always a win! Especially if it is a throw it in your slow cooker and let it be soup!
This Slow Cooker Chicken Pesto Soup with Orzo recipe is always in our family’s rotation regardless of the season. My kids gobble it up! And when they get to pick the meals this is one they always pick.
But don’t worry it also is a huge hit with adults as well. When I know I am having guests but will be on a time crunch to have dinner on the table or I’m not quite sure when to expect my guests – this is a great dinner to have for their arrival!

Slow Cooker Chicken Pesto Soup With Orzo Pasta - Super easy to throw together and is guaranteed to be a crowd-pleaser

Ingredients
- 1 32 oz Box Chicken Broth
- 2 Cups Milk I used 1%
- 1 small container pesto use only 1/2 C reserve the rest for the last 15-20 minutes
- 1 1/2 cups diced carrots
- 1 cup chopped celery
- 1/4 cup chopped onion
- 1 TBS Italian seasoning
- 3 cloves garlic minced
- 2 large chicken breasts
- 1 Cup Whole Wheat Orzo
- 1 8 oz Greek Cream Cheese
Instructions

Whisk everything but the chicken, cream cheese, and orzo pasta together in a 6 quartslow cooker Add chicken. Cover and cook on low for 6-8 hours (could be 4-6 depending on slow cooker). When the chicken is cooked through and easily falls apart, remove and shred.

Place shredded chicken back in the slow cooker. Stir in uncooked orzo noodles, cream cheese, and remaining pesto, then cook for another 15-20 minutes or until pasta is cooked.

Once the pasta is cooked, serve or turn slow cooker to warm setting. Season with kosher salt and pepper.

Top with freshly grated Parmesan cheese. We also like fresh diced tomatoes on the top of ours
