Garden Spells & Carrot Spoon Cake…

Whip It Up Wednesday!!

This past week it was my turn to host book club. We started our little book club back in 2005! I’m super proud of our little group, we have kept it going for eight years!! It started out as a neighborhood club but as some of us moved away we still keep getting together each month to discuss books and catch up on each others lives. The book I suggested that was chosen for the year, was Garden Spells by Sarah Addison Allen. It is an awesome book!! If you haven’t read it, you should!!! Sarah’s style is like reading cotton candy perfectly smooth, sweet and light… It really is the perfect summer read. Although there are some parts that are blush worthy the spice is kept to a minimum. Her books always have a hint of southern magic that adds a really fun element. So needless to say the book produced a lively discussion and debate!

As I was thinking about the book and what I should serve to my friends, I remembered this recipe that I found on foodnetwork.com from Sandra Lee, that I had tweaked awhile back and fell in love with! It is a warm delightfully delicious slow cooker treat!! With fresh carrots and pineapple it is definitely “Garden” inspired.

My Spread for the Party!!! Very “Garden” like 🙂 If you have read the book the basket of apples will make sense….

Slow Cooker Carrot Spoon Cake
Adapted From Sandra Lee

1 Box Spice Cake
1 Pkg Butterscotch pudding (the small box)
1 Cup Water
2 Cups Shredded Carrots – I shredded mine in my Cuisinart but you could cheat and buy carrots already shredded 🙂
4 eggs
1 20 oz can crushed pineapple -not drained
2/3 Cup Oil ( I used Canola Oil)
1 Cup Coconut
1 Tsp Vanilla
1 Cup Sour Cream (I used greek yogurt)
** Spray Slow Cooker with Cooking Spray***

Combine all ingredients in mixer then poor into prepared slow cooker  put a couple paper towels over the top then place lid on. The Paper towels help to keep cake moist! Cook on low for 4-6 hours.

Serve warm with fresh whipped cream or vanilla ice cream (Do NOT settle for cool whip!!!!!) and salted carmel sauce… recipe found HERE from the lovely Home Based Mom

This is a swoon worthy cake and worthy every calorie!!!! I love that I can just throw it in the slow cooker and have yummy cake ready later… It may not look very pretty when you are dishing it up, and it’s texture is more like a bread pudding then a cake… BUT my oh my is this is the most glorious treat!!!

Chop them carrots!!! I {heart} my Cuisinart!!!!
Seriously this is the easiest cake to make!!! Dump ingredients into mixer, mix then dump into your slow cooker!! DONE! 
Look how yummy!! The only bad news is you have to wait 4-6 hours to eat it 🙁

Really this cake is AMAZING!!! The salted carmel sauce and fresh whipped cream make it UNFORGETTABLE!!!
