I am excited to announce a big change to Maybe I Will!! Up till now my blog has been a walking contradiction. One post will be about health and wellness and the next one will be about an ooey gooey cake. I have decided to devote myself and my blog to helping find the most delightful and flavorful HEALTHY recipes to share with you peeps! Don’t get me wrong I love cake! But my cake making/treat making days will be reserved for only special occasion as I focus on serving up new and exciting ways to eat healthier! So keep checking back to see what I whip up!!
I love broccoli and I love garlic. So when I cam across this recipes on allrecipes.com awhile ago I was intrigued and was anxious to try it. I was NOT disappointed! The flavor is great and is a perfectly light salad to serve at BBQs and other gatherings.
Garlic Broccoli Salad
Adapted from Allrecipes.com
4 cloves garlic
1 1/2 tsp Kosher Salt
1 bunch broccoli – trimmed and cut into small trees
1/3 cup olive oil
1/4 cup red wine vinegar
1 tbsp Dijon mustard
1/2 cup freshly grated Parmesan cheese
Mince garlic, then add salt, olive oil, vinegar, and mustard to make dressing and poor over broccoli and let sit at least 2-3 hours. (this can be made the night before) add Parmesan cheese when ready to serve.
