Gluten Free Banana Cake w/ Sugar Free Cream Cheese Frosting

My kids LOVE bananas, so I buy a ton of them!! One might think I’m running some type of underground monkey shelter, just by the sheer quantity of bananas purchased. But if they want bananas, bananas they will get! I’d much rather have my kiddos snack on a banana then some sugary junk food crap. I’m really trying to instill in my children a love of healthy foods. So I buy the insane amount of bananas with a smile on my face! But sometimes those dang bananas go brown WAY to quick! Even when I buy them green! So I decided to hunt down a good recipe for a gluten free banana cake alternative! I found this gluten free banana cake recipe on Fit Chick’s Kitchen and gave it a try… of course I made some tweaks… cuz that’s just what I do! My kids loved this awesome and gluten free banana cake recipe! And they had no idea they were eating a healthy cake. They were just so excited that I had made a cake. It’s been awhile 😉  So if you’re looking for a way to use up those browning bananas and don’t want to damage your progress this gluten free banana cake is for you!

Gluten Free Banana Cake w/ Sugar Free Cream Cheese Frosting

1 Cup Almond Flour 1 tsp baking powder 1/4 tsp sea salt 3 eggs 1/4 C Coconut Oil Melted 1/4 C Raw Organic Honey 2-3 Mashed Bananas 1 tsp cinnamon 1 tsp vanilla combine ingredients in mixer until smooth pour into prepared 8x8 baking pan,

Bake at 350 for 40 minutes.

For Frosting:

Make your sugar -free powdered sugar by combining 1 Cup Stevia with 2 tsp corn starch or arrow root in your blender.. In a matter of seconds you'll have your very own SF powdered sugar! 1 Cup SF Powdered Sugar 2-3 oz  Greek Cream Cheese (Softened) 1 tsp Vanilla Splash of Almond Milk -- to just get the right consistency. Combine and frost cake once cooled!

  • 1 Cup Almond Flour

This Gluten Free Banana Cake is so easy to whip up and it is sooo good! The blender trick for making sugar free powdered sugar has rocked my world and I love it! My favorite Stevia to use can be found on Amazon, it bakes really well and doesn’t have any weird after taste!

If you’re new to being Gluten Free or want to research it more fully I highly recommend reading Rocco Dispirito’s latest book Cook Your Butt Off!: Lose Up to a Pound a Day with Fat-Burning Foods and Gluten-Free Recipes which will help eat gluten free AND shed pounds!

Also finding the perfect Almond Flour for baking can be really hard! Almond flour tends to burn easily and can make your cake heavier and make it taste like you just added a bunch of ground up Almonds to your recipe, yuck! Also keep in mind that Almond Meal is very different then Almond Flour!! Your best and most convenient bet is to buy Honeyville Almond Flour on Amazon and get it in 2 DAYS! Happy Dance! I <3 Prime! It will give you perfect consistency every time! Totally worth the investment. And don’t worry about buying in bulk! It will stay fresh in your freezer for up to 8 months! (just set out 1/2 hr before baking to get flour to room temperature)

    I made this gluten free banana cake tonight and after 40 minutes it still wasn’t done. So I baked it another cople minutes…. 5 more minutes, all the way up to it being in the oven for 55 minutes. I took it out because the edges and bottom were burning. After 55 minutes it still want done. What went wrong??

    1. I am not sure… I haven’t seen that happen before

      You probably did what the recipe told you and used ALL ingredients for the cake, even though the last few are actually for the frosting.
      This recipe isn’t very clear.

        This cake turned out wonderfully and if the recipe was more clear I would give it five stars… the taste and texture are excellent!

      2. #$&@ I did the same thing as lady above. I just thru it all away after I read this review. You are right because the directions are crappy. The way it should of read is “mix first nine ingredients and bake” then remaining ingredients is for frosting.

        Cooking gluten free is not cheap!

      Almond flour takes a very long time to harden. I usually cover the top rack and double baking time. Try it..

  2. How important are the eggs? Meaning if I did a vegan egg substitute (flax egg) will that work out you think?

    1. I have not tested the recipe with a flax egg substitute – but if you do let me know how it works out – a 1-1 substitute usually works best!

    Made this tonight and it turned out so good! Mine only baked for 30 minutes and was done (edges golden and toothpick came out clean). You have to read recipe clearly to make sure you dont combine all of the ingredients as some of the ingredients are for frosting. It’s hard to find delicious sugar free and gluten free recipes and this one was definitely a hit!!

  4. How can you state that this is sugar free frosting when it calls for powdered sugar?

    1. You make your own “powdered sugar” with stevia in your blender!

  5. tried this today…turned out good and baked for the exact time. I actually doubled the recipe because I had 5 bananas to use. It didn’t rise a lot but could have been the almond flour, I assume it is different than real flour. Thank you!

    mmmm! very good! I used two bananas and I didn’t have coconut oil or honey but used the same amount of sugar and vegetable oil and it was DELICIOUS!

  8. This recipe sounds delicious but what would be a good GF substitute for almond flour. On top of many other allergies I have Alot other severe allergies…. I’ve substituted coconut flour in recipes. Would replacing almond flour with coconut flour work in this recipe. Thks

    Made this and it was delicious! I want to make it into cupcakes for the Super Bowl. Any idea how I would adjust the oven temp and/or cooking time?

    1. I’ve never attempted making them as cupcakes, so that I wouldn’t know. I would keep a close eye on them as they are baking!

    Third time I made this. It’s so quick and easy! I made with Aquafaba to be egg free and it turned out perfect! Love love love this recipe! Good GAPS friendly recipes are hard to find. I always bring to potlucks and people never guess that’s it’s gluten free! ?

  13. Is the Cream Cheese dairy free? Since the milk is dairy free, I was just hoping. I am supposed to be both gluten-free and dairy free so just wishful.
