Healthified Green Bean Casserole!

We plant a garden every year, and have pretty much every year for the past 10+ years. This past  year was a bean year! We planted two whole rows of beans! My favorite! We canned them all at the end of the season and I was sooo excited to make my personal fav green bean casserole with home canned beans from our garden. I made my first batch at Thanksgiving and the beans were BAD! Epic garden fail! They were as hard as as rocks and tasted like crap! We must of waited too long to harvest this past year cause they were bad! I was so sad! But thank goodness for Del Monte® fresh canned beans! I have been using them since we had to throw away all our beans this year! They are an awesome replacement! I was perusing Sam’s Club’s Celebrate Spring site and found some really yummy casserole recipes using ALL Del Monte® canned vegetables! I found a delightful sounding green bean casserole recipe to try! It’s a little different then my normal go to! But I thought I would take their yummy recipe and tweak it to make it more waist line friendly! The result was soooo yummy! You’ll have to try it and all the other yummy recipes on the Sam’s Club Celebrate Spring site! I’m anxious to try some of those others featured there! (Making healthy tweaks of course!)

Healthified Green Bean Casserole
Adapted From Sam’s Club Celebrate Spring Site

2 Tbs Butter
2 TBS Flour
1 1/2 -2 Cups 1% Milk
1 Pint Fresh Mushrooms
2 Cans Del Monte® Blue Lake Cut Beans (available at Sam’s)
1 TBS Dried Onions
Pepper to taste
1 tsp Low Sodium Soy Sauce
1/2 C French Fried Onions

Melt Butter in sauce pan, add flour to make roux. Add Milk  slowly then and Mushrooms and simmer until thickened and mushrooms have softened. Add other ingredients excluding french fried onions.
Pour mixture into prepared casserole dish and bake at 350 for 25 minutes — remove and add the 1/2 Cup French Fried Onions and bake an additional 5 minutes — Then let cool and Enjoy!! So Tasty! Without the guilt! You’re Welcome!
