Protein Packed Pumpkin Spice Chia Seed Pudding

A delicious protein packed treat! Pumpkin Spice Chia seed pudding is filled with the superfood goodness and protein and all the lovely flavors of fall!

It is officially Fall, time to dust off the boots, grab a cozy sweater and embrace all things FALL! As much as I love summer, Fall is a close 2nd – If I have deal with chillier mornings at least there is Pumpkin Spice to make losing Summer bearable. 

I am an absolute sucker for pumpkin anything so as soon as the first leaf turn colors and fell I ran to the store to grab some cans of my beloved pumpkin. And since I am now a HUGE fan of chia seed pudding I knew I had to play with making the perfect pumpkin spice chia seed pudding, and I am happy to report I did just that! 

 

Making chia seed pudding is a breeze but without a little extra flavor it can be really bland – I love using premade Premier Protein shakes for my chia seed pudding because they add a great flavor and a much-needed protein boost! 

To start I used 1 Cup of Premier Protein Vanilla flavored premade protein shake 

Then you add your chia seeds – 4TBS to be exact then you add 1/4 Cup pumpkin puree, 1 tsp pumpkin pie spice, and 1/2 tsp vanilla, are you drooling yet? I am! I may or may not be taking a break now and heading to my fridge where I have one waiting! 😉 

Then you put your lid on and shake it – shake it and make sure everything is well combined. I usually will grab a spoon and stir it to, just to make sure I do now have any weird clumps. Then comes the absolute hardest part waiting the 2-3 hours for the pudding to set. I usually will make a few at the beginning of the week so that I have them on hand when I am craving a sweet treat.

Protein Packed Pumpkin Spice Chia Seed Pudding

All the delicious flavors of fall packed into one protein and superfood packed treat! 

Servings 1

Ingredients

  • 1 Cup Premier Protein Vanilla Shake
  • 1/4 Cup Pumpkin Puree
  • 1 Tsp Pumpkin Pie Spice Blend
  • 1/2 Tsp Vanilla

Instructions

  1. Mix Ingredients in Mason jar and let sit for 2-3 hours until well set - seeds will enlarge and create a "pudding" texture.
