The Best Chocolate Chip Protein Skillet Cookie

The other day my husband and I went out on a date that in itself is something that should be celebrated! Getting out and having some alone time sans the kids is so important for ALL relationships.

As we were enjoying our kid-free bliss and a nice quiet dinner, we decided to splurge and order dessert.

We ordered a skillet cookie – GUYS! It was heaven on earth. Every bite was so dang delicious. If you’re wondering what the hell a skillet cookie is,  let me fill you in on this little gem. It is a cookie {we ordered the chocolate chip} baked in a little skillet and topped with ice cream and a drizzle of hot fudge or chocolate syrup. Also commonly known and referred to as a pizookie.

It is the kind of dessert you dream about.

So after our blissful night out and heavenly dessert, I decided this little recipe needed to be recreated… STAT!

So I went to work trying several different variations until I created the perfect HEALTHYish version!! It is all the things a good skillet cookie should be,  ooey-gooey and melty, and bonus peeps; it is packed with some healthy ingredients and some much-needed protein!

So we can enjoy this more frequently!! #win!

Whipping up your own skillet cookie is pretty simple and only requires a few ingredients. 

First, you’ll want to combine all your dry ingredients, Vanilla Protein Powder, Coconut Flour, and Baking Soda.

Next, add all your wet ingredients to the mix 1 Egg, Brown Sugar, Vanilla, and Almond Milk.

This is the desired texture you’re going for.

Once all ingredients have been combined, your batter should resemble this texture! Don’t forget to throw in your chocolate chips I recommend dark chocolate because they are healthier and have less sugar, but if you want to indulge in some milk chocolate chips, no judgment here!

The next step is to add the dough to your prepared skillet. You can spray it with a little cooking oil to prevent sticking. 

The next step is the hardest…waiting for the dang thing to cook!! But the good news is, it is  BEST straight out of the oven with a little ice cream.

I recommend Protein ice cream (like Halo Top or Rebel ice cream) to add even a little more protein!

Mouthwatering Protein Packed Skillet Cookie

This ooey-gooey mouthwatering protein packed skillet cookie is all the things a GOOD skillet cookie should be with the added benefit of Protein!!

Cook Time 10 minutes

Ingredients

  • 1 Scoop Vanilla Protein Powder
  • 1 TBS Coconut Flour
  • 1/4 tsp Baking Soda
  • 1-2 TBS Almond Milk Add to desired consistency
  • 1 Egg
  • 1 TBS All Natural Peanut Butter
  • 1 TBS Brown Sugar Can be subbed with agave or maple syrup
  • 1/4 cup Dark Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees 

  2. Combine all dry ingredients 

  3. Add Wet Ingredients – mix until well combined 

  4. Sprinkle in chocolate chips 

  5. Add mixture into prepared mini skillet or baking dish 

  6. Bake for 10-12 minutes you do want it to be slightly undercooked for pure ooey-gooey deliciousness

    Just made this and it was amazing! Tasted just like a skillet cookie I used to get for dessert at a place called Crave! I ended up using two tablespoons of mini chocolate chips instead of 1/4 cup and it was still amazing and reduced the calories to 471! I may or may not have eaten this for dinner. LOL. It was SO good and totally crushed my sweet tooth while helping me hit my protein goal! Thank you for this recipe, it’s my new favorite!
