Sugar Cookie Bars with White Chocolate Peppermint Frosting

This is NOT a healthy recipe! This is a good ole’ fashioned delightfully indulgent splurge! This time of year, it’s all about moderation and taking time to enjoy a few splurges here and there.
I love sugar cookies, but I’m just too lazy to roll them out and then make cookie cut outs. These are awesome, you get the same yummy taste without ALL that work! This year I messed with some flavors and made up the BEST white chocolate peppermint frosting! It’s a good thing I took these to the neighbors! I could of eaten a pan by myself!

Sugar Cookie Bars with White Chocolate Peppermint Frosting
Adapted from The Girl Who Ate Everything 

1 cup butter, room temperature
2 cups sugar
4 eggs
2 teaspoons vanilla 
5 cups flour
1 teaspoon salt 
1/2 teaspoon baking soda
1 teaspoon orange zest — this may seem weird but trust me, it;s AWESOME!! 


Frosting:

1/2 cup butter, room temperature
1/2 tsp peppermint extract 
3 Crushed Up Candy Canes 
4 cups powdered sugar
5 Tablespoons heavy whipping cream 
1 Cup Melted White Chocolate Chips 

Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla and mix well. In a separate bowl combine flour, salt, baking soda and stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (use a 13 x 18 pan). Bake at 375 degrees for 10-15 min, until light golden brown. 

For the frosting: Melt Chocolate in Microwave… Microwave in 60 second at a 70% reduced power, until smooth and melted. 
Then whip butter until smooth and creamy. Add peppermint extract. Add powdered sugar in 1-2 cup increments until combined, then add cream a little at a time and mix until smooth and spreading consistency. You may not need all the cream. Blend in melted chocolate and crushed candy canes. Spread over cooled cookie bars. And Enjoy!!!
