Raise your hand in the air if you struggle to find easy after school snacks for your kids? I don’t know about your kiddos, but mine come home starving! It’s like they didn’t even eat lunch. It drives me crazy! I decided it was easier to have a prepared snack then to let them go wild in the pantry and fridge.

My kids really like taquitos – how can they not; it’s meat, cheese, and tortilla… baked or fried it’s the perfect snack! So I thought I would experiment with some unique flavors and try something a little outside the box… Hence the birth of  Baked Chicken Pesto Taquitos! My kids LOVE them! And I love them because I can whip them up in under 20 minutes! That is a win my friend! I look like the coolest Mom ever and they are a cinch to make!

And for us adults with a more highly trained palette – these Baked Chicken Pesto Taquitos are ahh-mazing and would make a great appetizer for a party! With football season upon us these would be an easy throw together appetizer that is sure to impress!

Baked Chicken Pesto Taquitos

Baked Chicken Pesto Taquitos - These make a great after-school snack or an awesome appetizer that will impress!

Ingredients

  • Baked Chicken Pesto
  • Taquitos Andie Thueson
  • 2 Cans Hormel Premium Chicken
  • 4 ounces Cream Cheese
  • 2 TBS Pesto
  • 1/2 Cup Shredded Mozzarella
  • Pepper to taste
  • garlic salt - to sprinkle on top
  • 6 Low Carb Wraps

Instructions

  1. Combine cream cheese, chicken, pesto, mozzarella, and pepper - spoon mixture into low carb wraps - wrap tightly laying on prepared backing sheet seam side down. Spray lightly with olive oil cooking spray and sprinkle with garlic salt. Place in preheated 400 degree oven and back for 8 minutes - flip carefully with tongs and spray other side and lightly sprinkle with garlic salt and continue baking for an additional 8 minutes. Let sit for a minute or two before transferring to serving platter - That's it! Now Enjoy
